These little baked tomatoes are so juicy and delicious. It’s one of my favorite tomatoes recipes for an easy appetizer!
Baked Tomatoes with Cheese are the easiest appetizer or side dish you could make. I absolutely love the simple flavors of tomato, mozzarella, and basil (as you can probably tell by the many caprese inspired recipes on this site).
With Thanksgiving only days away, it feels like a mad dash to finalize the menu with delicious (AND EASY) sides for Thursday. Thanksgiving is at our house this year, so I’m feeling the pressure! I want to do some unique recipes (my Hawaiian Sweet Bread Stuffing will be the star of the side dish show!). But I also want to add in a few simple recipes so that I can enjoy the day with the fam.
These Cheesy Oven Roasted Tomatoes are just the thing to complete our meal! Just slice up a tomato, cover them with cheese, and pop them in the oven. In no time at all these tasty little tomatoes are ready for eating.

Oven Roasted Tomatoes and Mozzarella
These Cheesy Baked Tomatoes are just too tasty! I’ll never get tired of the fresh flavor of these simple ingredients. Mozzarella and Parmesan are the best cheeses to add to fresh tomato, because it’s just so classically Italian. And the Italians sure know how to make a simple yet delicious dish!
You can never go wrong with ripe tomatoes, shredded cheese, and fresh herbs. And I really loaded the cheese on these bad boys (as if that’s a surprise)! A little bit of this homemade basil pesto on top would be sooo good!
How to Make Baked Tomatoes
Making these baked tomatoes is super easy.
Just slice up a ripe tomato and lay the slices out on a baking tray.
- Next I added plenty of Mozzarella and Parmesan cheese to the tomato slices,
- and then I topped them off with a sprinkle of fresh basil and a bit of olive oil.
- They only take about 10 minutes to bake in the oven!
I loved cooking up these oven roasted mozzarella tomatoes. And, as always, Scout was on hand for recipe testing. Just on cheesy smell alone, she gave these the seal of approval!
How do you cook tomatoes in the oven?
Cooking tomatoes in the oven is the best way to get the full flavor. Roasting tomatoes really brings out their sweetness and makes them extra juicy.
This fresh baked tomatoes recipe is really easy to cook in the oven. Just lay them on a baking tray, and bake for about 8-10 minutes. That’s all it takes! If you want them to be a little crispy, you can also broil them for a couple of minutes at the end.
Mozzarella, Tomato, and Basil
The classic combination of tomato, Mozzarella, and basil is also known as a caprese salad. There are so many ways to add this flavor combo into different dishes, and I never turn down an opportunity for caprese anything. Pizza, pasta, salad, or even just a simple appetizer like these Baked Tomatoes…it’s all delicious!

Baked Tomatoes with Mozzarella and Parmesan
- 4 roma tomatoes sliced
- 1 cup shredded mozzarella cheese
- 1 cup shredded parmesan cheese
- 1/2 cup fresh basil chopped
- olive oil
Instructions
- Preheat oven to 400F
- Place tomato slices on a parchment lined baking sheet
- Top each tomato with a layer or parmesan and then a layer or mozzarella
- Sprinkle the chopped basil on top of each tomato
- Drizzle lightly with olive oil
- Bake for 8-10 minutes or until cheese is melted and bubbly
- Turn off oven and broil for 2-3 minutes to brown the cheese
- Serve immediately. Enjoy
